We love a savoury cocktail and even better when you can use seasonal ingredients. A must-try for beetroot season and a great way to use up leftover beets.
- 50ml Pod Pea Vodka
- 25ml beetroot & peppercorn shrub
- 20ml lime juice
- finished with soda and mint leaves
For your shrub, you'll need:
- 5 beetroot
- 1/2 cup apple cider vinegar
- 1/2 cup distilled white vinegar
- 1 cup sugar
- 1tsp peppercorns
- 1tsp salt
Puree the beets and vinegar and strain. Add to a clean container with the remaining ingredients. Cover and steep for 1 day, then fine-strain, bottle and keep in the fridge.
